BBQ Chicken Stuffed Mushrooms
Ingredients:
- 4 large portobello mushrooms
- Shredded Cheese (sharp cheddar works well)
- 1 onion (red or yellow – whatever you have on hand)
- 1/4 cup shredded chicken
- Keto Barbecue Sauce (recipe below)
Directions
- Preheat oven to 350-400 degrees F.
- Chop onions and saute in a pan over medium-high heat until golden brown,
- remove from pan and saute mushrooms for a few minutes.
- Place mushrooms on baking sheet,
- Layer sauce, onions, cheese, and chicken pieces,
- Cook for approximately 10 minutes.
Keto BBQ Sauce
Ingredients
- ½ cup tomato sauce
- 3 tbsp stevia
- 1 tbsp apple cider vinegar
- ½ tbsp worcestershire sauce
- ½ tsp garlic powder
- ¼ tsp chipotle powder
- ¼ tsp paprika powder
- ½ tsp sea salt
Optional Ingredient
- 2 tsp liquid smoke (for extra smokey flavor)
Directions
- In a mixing bowl, add all the ingredients and whisk thoroughly until stevia dissolves. This could take a few minutes.
- Ready to serve
