Caulifower Soup
Ingredients
1 Yellow onion, diced
1 Head (about 1 to 1.5 pounds) cauliflower cut up into florets
4 Cloves garlic, minced
Salt and fresh ground pepper to taste
4 Cups chicken broth, you can also use vegetable broth, bone broth, beef broth, etc...
8 ozs Cream cheese
1/4 Cup shredded cheddar cheese, for garnish, optional
1 Teaspoon dried chives, for garnish, optional
Directions
- To make the cauliflower soup, simply add all ingredients except optional cheese (cheddar and cream cheese) to a medium pot. Bring to a full boil.
- Once boiling, cook on medium—stirring occasionally—for 10 minutes or until cauliflower is soft.
- Stir in cheese until melted.
- Use an immersion blender to pulverize the soup until creamy.
- Garnish with cheddar cheese and chives
