Chocolate Chip Cookie Bars
Ingredients
- 8 ounces of cream cheese (room temperature)
- 1/2 cup unsalted butter (room temperature )
- 1 cup Stevia
- 1 cup Swerve brown sugar replacement
- 5 eggs
- 2 tsp vanilla extract
- 1 cup almond flour
- 1/3 cup of coconut flour
- 1/4 teaspoon sea salt
- 1 1/2 teaspoons of baking powder
- 1/4 tsp xanthan gum (optional but this is what makes this cookie bar a little chewy)
- 1 cup of sugar-free chocolate chips or 72% Cocoa Chocolate chips
Directions
- Preheat oven to 350 degrees. Grease a 9x13 greased baking dish.
- Beat together the butter, cream cheese, vanilla extract and sugar substitutes.
- Add the five eggs one at a time, mix well making sure the eggs are well incorporated into the batter.
- Fold in the almond flour, coconut flour, baking powder, salt, and xanthan gum.
- Stir in the sugar-free chocolate chips with a spatula.
- Spread the batter evenly unto the 9x13 baking dish.
- Bake for 30-35 minutes or until golden brown.
- Allow cookie bars to cool completely before slicing.
